Lox on a Bagel with Tomato

My favorite breakfast is lox on a bagel with tomato, and possibly lettuce. It makes for a yummy Saturday morning treat.

Lox is the Yiddish word for salmon but usually refers to "a fillet of brined salmon" (Wikipedia). It originated around New York or New Jersey. It is usually a breakfast food but you can eat it whenever. The lox comes on a poppy seed bagel with cream cheese, red onion, and capers. Sometimes you get it with lettuce and/or tomato.

Here's my recipe:

Ingredients
  • bagel of your choice - cut in half
  • spreadable cream cheese
  • 1 small package of smoked salmon - you will need only about 1-2 oz. and make sure it's not too thick (imagine cheese slices)
  • 1 red onion
  • 1 jar of capers
  • beefsteak tomato
  • lettuce leaf - if you desire

Directions
Use one half of the bagel and spread the cream cheese on top covering the hole.  Cover cream cheese with smoked salmon. Peel red onion skin and cut one thin slice.  Take two pieces of the sliced onion and place on top of the salmon.  Place a teaspoon of capers in the center of the smallest onion pieces.  Cut a thick slice of tomato and place that slice on top of the onion pieces covering the capers (this way the capers don't fall off when you pick it up to eat it.)  Viola! You have created your very own lox on a bagel with tomato.

Note: I usually buy a single bagel at a local bakery because I cannot eat a whole bag of bagels before they mold.
