Quick and Easy Cucumber Tomato Salad

If you are looking for a last minute dish to bring to a Fourth of July party this might be for you. This is my mom's super easy recipe for cucumber and tomato salad.

Ingredients: 3 cucumbers, 3 tomatoes, 1 onion

Here I have chosen three English cucumbers, 3 heirloom tomatoes, and 1 red onion but you can use whichever type of each that you like.

Clean all the ingredients. Peel and chop the cucumbers. You want to make the cucumbers thick enough to easily pick up with a fork (about 1/4 of an inch.) Slice the tomatoes to about the same thickness. Peel and thinly slice the onion, then slice those slices in half. Put all the cut and sliced ingredients in a bowl.

To make the dressing use a packet of Good Seasons Italian Salad Dressing Recipe Mix.

Mix vinegar and oil with the packet according to the package directions. I like to use red wine vinegar and canola oil. My mom has a carafe for mixing but you can mix it in a bowl as well.

Pour the dressing in the bowl with the salad and you're done. The great thing about this salad is that it gets better with time; The cucumbers and tomatoes soak up the dressing so the longer you let it sit the better it gets. Enjoy!

  1. This is one of my favorite salads! I made some the other day and added a little seasoned feta cheese and olives and put it all in a pita to make it more of a meal. I'll have to try the Italian dressing next time. Thanks for sharing!

    1. I'll have to try putting it in a pita; It's sounds yummy! My aunt makes a similar salad with olives and feta but also adds pasta shells.
